Since we met, 3 years ago, our story has felt like it’s already written and we are just here for the ride. Right from the start we knew we were great together. But if you had told us then that we would open and run a food truck together we would have laughed and thought you were crazy.

We met during Covid in 2020 and after a year of travelling back and forth between Mexico and Iceland, and countless covid tests, Manuel left the turquoise Caribbean seas, the sunny beach palm trees for the snowy mountains of the island of fire and ice. Or we can say he left the Popocatépetl for Eyjafjallajökull.

Shortly after settling in Iceland, Manuel discovered his passion for cooking, from working in a Mexican restaurant in downtown Reykjavík and being inspired by its owner’s love for Mexican food. Fast forward to some months later we are watching the movie Chef and with that movie, the first seed is planted for La Buena Vida. Manuel, having had his own business in Mexico for over 20 years and Bjarney being her own boss and entrepreneur, we both knew from the start we would eventually create a business together. In May this year, we saw our food truck for sale, in Hjalteyri. We thought, this is it! And few days later we were driving five hours to the north of the island and 5 hours back with a food trailer hooked behind. Of course the main food truck season in Iceland is as short as the summer, so we had to speed it up! We resolved million things in few weeks to have it up and running. We fought and argued, but mostly we had fun. Then came the hard part, the actual work! We both understand that to make your business work you have to be there and take care of it yourself. So we’ve really put in the hard work and a lot of love. We couldn’t be happier with the reception we’ve had and we can’t wait to see what the future holds.
